How to Make Peanut Butter Cookies in an Air Fryer

We love peanut butter cookies and I was thrilled to figure out how to make a low carb sugar free version of one of our favorites! This recipe makes those delicious small crisp peanut butter cookies- yum! (Note: I am still working on a low carb version of the softer classic peanut butter cookie I used to make from my childhood.)
While figuring out a low carb peanut butter cookie recipe was great, I was even more excited to figure out I could make an air fryer version in my Ninja Foodi while we are on the road in our RV!
You can use a traditional air fryer or the Ninja Foodi to bake these babies up on the go. If using a traditional air fryer, you can place them directly in the air fryer basket. Or, if using the Foodi you can use the air crisp basket (or even a perforated pizza pan on a trivet). We like to bake ours in batches of 6.
How to Make Sugar Free Peanut Butter Cookies in an Oven
If you would rather pop these in the oven, just spread the cookies out at least an inch a part on a cookie sheet. If baking in oven, you can bake in batches as big as your cookie sheet will allow.

Ingredients
- 1 egg beaten
- 1 cup sugar substitute we use sukrin
- 1 cup all natural peanut butter we used 100% peanuts
- 1 teaspoon liquid stevia drops
Instructions
Combine ingredients into a dough.
Form dough into 24 balls
On a cutting board or cookie sheet, press balls with a fork to create classic criss cross on top.
Place 6 cookies spread out into air fryer basket or if using the Foodi you can use the air crisp basket (or even a perforated pizza pan on a trivet). If using an oven, spread cookies out at least an inch a part on a cookie sheet. (If baking in oven, you can bake in batches as big as your cookie sheet will allow.
Air Crisp or Air Fry at 325 for 8-10 minutes. Or, bake in a pre-heated 325 oven for 8-10 minutes.
Allow cookies to cool for a minute or two before removing with a spatula and placing on a plate to finish cooling.
Finish baking the rest of the cookies in batches.

They smell delicious but are the consistency of pudding. What did I do wrong? I used Trader Joe’s organize peanut butter….peanuts only and granulated monkfruit

We haven’t ever tried this with monk fruit peanut butter, so we can’t say if that is the issue. Try using 100 percent peanuts peanut butter.

Can you use molasses for the sugar substitute?

We haven’t tried this recipe using molasses instead of a sugar substitute. The sugar substitute has less carbs than molasses and is not a thick syrup. I am not sure how it would alter the end product. If you give it a try, let us know how it turns out!
