Who doesn't love pancakes! They are delicious, fluffy, light, quick, and perfect as breakfast/dinner. These ragi sweet pancakes or finger millet pancakes are no exception, and it is one of the best ways to include nutritious ragi in your family diet. It's my all-time favorite comfort food as it tastes delicious.

Ragi pancakes - ragi, aka finger millet pancakes (sweet ragi dosa) recipe with ragi flour & banana. Easy and super healthy breakfast/dinner for babies & kids.

Ingredients

  • Ragi flour - ½ cup
  • Organic Jaggery powder - 1 to 2 tbsp optional
  • Coconut scrapped - 2 tbsp
  • Banana - 1 medium-sized mashed
  • Cardamom - 1
  • Cashews - 1 tbsp optional
  • Water - as needed
  • Salt - a pinch
  • Oil/ghee - for making dosas

Instructions

Preparation

  • Sterilize the bowls and spoons used for feeding your baby in a vessel with hot water for five minutes and keep it immersed in the same vessel until use.

Method

  • Measure ragi flour, coconut & Jaggery. Keep it ready. Mash the bananas with a fork and set aside.

  • Take jaggery in a saucepan & add water till it immersed level. Heat the jaggery until it melts completely. Strain the jaggery water using a strainer to remove impurities. Set aside.

  • In a vessel, add ragi flour, jaggery water, scrapped coconut, crushed cardamom, and mashed banana. Add water little by little and mix well so that no lumps are formed. The batter should be like regular dosa batter consistency neither too thick nor runny. Finally, add cashews to the mixture and mix well. Set aside.

  • Heat a dosa tawa, add a ladle of batter to it, and spread it to form a circle. Don't spread too much. Sprinkle ghee or oil. Cook until brown on one side for five minutes and flip the dosa. Cook for a minute and remove from tawa. Repeat the same process for the remaining batter.

Notes:

  • If you want the pancakes to be more crispy, add a ¼ cup of rice flour.
  • Banana helps to soften the pancakes. I used a red banana. You can use any sweet-tasting ripe bananas.
  • For small babies, skip jaggery. Just mash the pancakes with your hands or dip in warm water and give.
  • Don't add whole cashews for small babies as that might lead to choking hazards. Instead, add them in powdered or paste form.
  • You can add a pinch of baking powder if making for adults to get more softness.
  • Don't spread it too thin. Otherwise, it may stick to the tawa.
  • Generally, ragi doesn't cause any allergies, but check for symptomsand stop feeding your baby if you find any.
  • Adding salt is not recommended until one year of age.
  • Always check with your pediatrician before introducing any new food.

    I tried this receipe. But it didnt come as dosai..i didnt use non-stick..is that my be the reason?

    i added 1 big banana, 1 cup ragi flour and jaggery, 2 tblsp coconut..

    You should cook in low flame and make it slightly thick unlike dosa..If cooked in high flame or spread thin it may stick to the tawa..hope it helps
