To start making my bechamel sauce, you’ll want to melt vegan butter in a medium pot over medium heat. Then, whisk in flour. You should begin to have a thick paste. Continue to cook, whisking constantly for 2 minutes to cook out the flour flavour.

Reduce heat to low and slowly whisk in 1 cup soy milk until well combined. Add the onion powder, salt, and ground nutmeg. Add remaining soy milk, 1 cup at a time, whisking constantly until the sauce is free of lumps. Then, increase heat back to medium and continue whisking sauce until it thickens, about 5 mins.

FAQs

What is a good substitute for béchamel sauce? ›

With a lovely creamy texture, cream cheese is a great bechamel alternative, as it's stable and won't split. It has a slightly tangy flavour, so it won't taste like a traditional bechamel – try flavouring with parmesan, chopped chives or a pinch of ground nutmeg.

What is the basic formula for béchamel sauce? ›

The Basic Béchamel Ratio

The basic ratio for a classic béchamel is 3 ounces of fat (butter, ghee, coconut oil) to 3 ounces of all-purpose flour for the roux. This ratio of roux will thicken up to a quart of milk, but you can use less milk for a thicker sauce, as we do below.

What is the white sauce in lasagna made of? ›

A classic French sauce, a béchamel is made with flour, butter, and milk. It is used in many dishes from lasagna to macaroni and cheese to gratins and casseroles to croque monsieur. The butter and flour are cooked together in a heavy-bottomed saucepan to form a thick paste (the roux) before milk is added.

What is the thickening agent in béchamel sauce? ›

Flour: All-purpose flour is the thickening agent in bechamel sauce. Combined with the melted butter, it forms a roux, which helps thicken the sauce and gives it that velvety consistency. Milk: Milk adds to the creaminess and helps bind the ingredients together.

Is Alfredo sauce the same as bechamel sauce? ›

Can I use evaporated milk instead of milk for bechamel sauce? ›

I wanted to prepare homemade macaroni & cheese but had no milk on hand. I looked upped if I could make bechamel with evaporated milk. By golly I could and it was the easiest bechamel I have ever made! Added my cheeses, added some cayenne, shredded onion with it's juice, then salt (not much) and pepper to taste.

What's the difference between white sauce and bechamel sauce? ›

The term “white sauce” is a more general term that is sometimes used to refer to any white-coloured sauce, while “béchamel sauce” specifically refers to the white sauce made from a roux and milk. However, the two terms are often used interchangeably. In most cases, they refer to the same sauce.

What are the ingredients for béchamel sauce? ›

In fact, it only has three ingredients: milk, flour, and butter. It starts with a blond roux, made by whisking flour and butter for about 2 minutes in a saucepan on the stove. That's just long enough to cook the flour without browning it to eliminate the pasty taste that comes from raw flour.

What is the name of the mother sauce typically used in lasagna? ›

Béchamel is made by thickening hot milk with a simple white roux. The sauce is then flavored with onion, cloves, and nutmeg and simmered until it is creamy and velvety smooth. Béchamel can be used as an ingredient in baked pasta recipes like lasagna, and also in casseroles.

How do you thicken white sauce for lasagne? ›

Cook a little more roux in a separate saucepan by cooking equal parts butter and flour over medium-high heat until straw coloured. Whisk the into the thin sauce. Bring to the boil and stir for 5 minutes until your sauce has reached the desired consistency.

What is Greek lasagna made of? ›

Pastit*io (pastichio/pasticcio/pastizio) is a Greek pasta bake or Greek lasagna made of layers of pasta, a delicious meat sauce, and a topping of creamy béchamel that gives it an extra luxurious silkiness and hearty finish. It's one of those legendary dishes similar to moussaka, but of course there is no eggplant here.

Why won t my béchamel thicken? ›

Cause: Ratios are wrong (too much liquid or not enough flour) or roux is cooked too long or too short. Solution: First try and cook it for a bit longer and see if it thickens up. If not, make a little more roux in a separate saucepan (using equal parts butter and flour).

What is the best flour for bechamel sauce? ›

If you only have bread, cake, or pastry flour, they should work in the white sauce because the primary difference is the gluten content. Even better is a combination of bread and cake flours (essentially making all-purpose flour).

Béchamel is a sauce made by thickening milk or half and half with a roux. You could use cream, if you wanted your béchamel to be really rich, like cream soup rich. Since it has been thickened with a roux, béchamel is more viscous than cream. It also has more flavor.
