Why we love Cherry & Pistachio Brownies Recipe

We love our Cherry & Pistachio Brownies Recipe– the brownie base is Gram’s recipe. My Grandma Louise, was the inspiration for starting our blog over 12 years ago.

Then we give them a holiday twist by adding a layer of dark chocolate then dried cherries and pistachio nuts!

Ingredients Cherry & Pistachio Brownies Recipe

  • cocoa powder
  • butter
  • eggs
  • sugar
  • vanilla
  • flour
  • sea salt
  • pistachios
  • dried cherries
  • dark chocolate chips

How to make Cherry & Pistachio Brownies Recipe

  • Preheat oven to 350 degrees.
  • Coat 9×13 baking pan with cooking spray; set aside.
  • In a small sauce pan add butter and melt.
  • Whisk in cocoa powder until combined; set aside.
  • In a mixing bowl beat eggs and sugar until light and fluffy; approximately 5 minutes.
  • Add vanilla.
  • Slowly drizzle in cocoa mixture and mix until combined.
  • Add flour 1 cup at a time; mixing with each addition.
  • Add sea salt.
  • Evenly spread batter into prepared pan.
  • Bake 20-25 minutes or until toothpick inserted in center removes clean.
  • Allow to cool completely.
  • When brownies are cooled melt chocolate in a small microwave safe dish melt chocolate for 30 seconds, stir, microwave 15 seconds more, stir until completely melted or in a double broiler on the stove top.
  • Spread melted chocolate onto brownies, evenly distribute pistachios and dried cherries on top.
  • Allow to cool completely and cut into squares.

Happy Fit Friday! It is almost Thanksgiving, the grateful social posts have been going strong. I am reminded consistently how grateful I am for my body and my health.

  • 8 tablespoons cocoa powder
  • 14 tablespoons butter (2 tablespoons less than 1 cup)
